Bibim Guksu (Korean Spicy Cold Noodles) Recipe

Bibim Guksu, otherwise known as Korean Spicy Cold noodles, is a refreshing cold noodle dish. It is jam-packed with spicy, sweet, and tangy flavors and is a perfect summer dish. Best of all it is so easy to make!.

Now that I am primarily working from home, I love having an arsenal of meal ideas that are easy to put together, healthy, and, most importantly, delicious. I seem to mostly gravitate towards Korean cuisine in this respect (see my Korean Mayak Egg recipe here, which by the way, pairs perfectly with these noodles)

Here’s what you need

Ingredients

For the sauce

 
  1. 2 tablespoon Gochujang, Korean Red Pepper Paste (you can find this in most good Asian groceries)
  2. 2 tablespoon Rice Vinegar
  3. 1 tablespoon Soy Sauce
  4. 1 tablespoon Mirin
  5. 1 tablespoon Sesame Seed Oil
  6. 2 tablespoon Honey
  7. 1 tablespoon brown sugar
  8. 2 teaspoon sesame seeds

Toppings

  1. Fresh Vegetables, you can use ANYTHING; I used some cucumbers and carrots
  2. Kimchi (optional)
  3. Hard-boiled egg (optional)

And of course 1 pack of Soba (I used Hakubaku Organic Soba)

Instructions

  1. First, we boil the soba noodles according to the instructions on the pack 
  2. While the noodles are cooking, start mixing the ingredients for the sauce in a salad bowl; do this gradually in the order of the ingredients listed above; you now have your bibim sauce!
  3. Drain the soba noodles and run over cold water
  4. Slice your vegetable julienne style
  5. Place the noodles into the sauce in the mixing bowl, mix thoroughly and make sure that good stuff properly soaks the noodles
  6. Place the mixed noodles now in a serving bowl
  7. Garnish with the sliced vegetables from earlier 
  8. Add in your kimchi
  9. Mix it all together and ENJOY!
