The Lotus Biscoff Baked Oats was a trend that took off on Tiktok recently. Anyone who knows me or follows me on my Instagram will know that I am (slightly) obsessed with Lotus Biscoff. I also love having some form of complex carbs for breakfast as it keeps me full for longer and energizes me for the day ahead.

I knew I had to try this breakfast idea as soon as I saw it. It was delicious, and I wanted to share the recipe so you can try it out too. Here’s what you need

Ingredients

  1. 40g Oats
  2. 20g Whey Protein
  3. 1/2 tbsp sweetener of choice (I used Stevia)
  4. 1/2 tsp baking powder
  5. 1/2 ripe/overripe banana
  6. 80ml almond milk 
  7. Lotus Biscoff Spread
  8. Lotus Biscoff Biscuits

Instructions

  1. Blend the oats, whey protein, sweetener, baking powder, banana, milk until you get a smooth, batter consistency
  2. Pour the mixture into a ramekin (or microwave friendly mug), keep about 1-2 tablespoons of the mixture
  3. Place one very generous tablespoon of lotus biscoff spread in the center of the mix in the ramekin
  4. Cover over the biscoff spread with the rest of the mixture
  5. Crush up 1-2 lotus biscoff biscuits and sprinkle it over the top
  6. Place the ramekin into the microwave for 1 minute
  7. Serve and enjoy!

Hot tip – you can vary the filling and topping of the baked oats to keep things interesting. For example, you can replace the lotus biscoff spread and biscoff biscuits with dark chocolate pieces and chocolate chips instead. Other options include blackberry jam and blackberries. The possibilities are endless!
