As the name suggests, the Buffalo Dining Club in Darlinghurst is dedicated to the art of creating dishes around the mozzarella buffalo cheese. This niche approach is analogous to Michael Fantuz, the founder of other culinary delights such as Table for 20, Sticky Bar, and Johnnies Goes Italian. Michael is a master at creating establishments that revolve around one central ingredient.

The Buffalo Dining Club is the collaborative brainchild of Michael Fantuz, Marcelo Garrao, and Peter Kypreos. The flagship dish at this eatery is the Cacio e Pepe (translating to cheese and pepper in Italian). This pasta dish is first flavored with pepper, salt, olive oil, and parsley, then tossed in a HUGE, hollowed-out pecorino cheese wheel (!).
The Mains
I instantly knew that I had to try this dish when I saw an Instagram post of the pasta being tossed in the wheel. I filmed mine for all of you to view below.
The Starter of Choice
As a warm-up to your main meal, consider getting a cheese starter. Choose between Caprino, Scamorza, Fresh Burrata, or the classic Parmigiano served with two sides and bread.
Once you’ve selected the food, it’s time to make some decisions on the wine. Don’t worry, the Buffalo dining Club has your back. They have a wide selection of wines that have been carefully curated to pair with all the cheeses.
If you’re fortunate, you may find yourself there on a night where they are serving desserts. You can expect gelato, tiramisu, and panna cotta.
The service is excellent, and they have spaced out their seating arrangements to comply with the current social distancing regulations. With this in mind, reservations are essential if you plan to visit as a group. For single dine-ins or intimate gatherings, expect a queue.
